If these blankets are Organic, does it mean they smell of sheep/wool?

Absolutely not! Any wool product that does smell of sheep or wool is of inferior quality and should be avoided.

Could one of the Crib size blankets be used in a pram?

Definitely, they are a useful little blanket that will be cherished and enjoyed
