If these blankets are Organic, does it mean they smell of sheep/wool?

Absolutely not! Any wool product that does smell of sheep or wool is of inferior quality and should be avoided.

Could I use one of these "Crib size" blankets as a Knee rug?

Definitely, they are a small and useful size.

You seem to do a wider range of sizes in this range, why?
